What is the difference between sodium metabisulfite food grade and industrial grade?
According to the national standards GB1886.7-2015 (Food Additive – sodium metabisulfite) and HGT 2826-2008 ( Industrial Soium metabisulfite), the difference between sodium metabisulfite food grade and industrial grade is as follows:
1. Industrial grade does not have requirements for lead content and solution clarification, while in food grade sodium metabisulfite, lead is required to below 5PPM, and solution clarification need to pass some test.
2. The iron (Fe) content required for the industrial grade is below 50PPM, the food grade is below 30PPM. Most manufacturing enterprises are within 20ppm.
3. A Food additive production license is mandatory for food sodium metabisulfite production. It is not necessary for industrial sodium metabisulfite.
By the way, the main content of the two products are the same in the standards, both are not less than 96.5%. In actual production activities, the main content is generally more than 97%。However, as long as chemicals meet national standards, they are qualified. If for special purpose, customers can specify the main content.
Sodium Metabisulfite Food Grade Application
Sodium Metabisulfite Food Grade can be used as a food preservative, antioxidant, and bleaching agent. It is also a reducing agent that is commonly used for the preservation of fresh & dried fruits, vegetables, and wines. It is used with prawns, fresh fruit and vegetables to prevent browning and in soft drinks, wine, beer and dried foods. An example of a particular use of Sodium Metabisulfite is in the chip which it used to help keep freshly cut chips dry and white, preventing browning or discoloration. When used in the food industry, sodium metabisulfite has strict dosage limits. It can be harmful to human health.
Sodium metabisulfite Food Grade can be used as a sterilizer and an antioxidant. It is used in almost all commercial productions of beer and wine. Adding some sodium metabisulfite to the pressed juice will kill any molds that are already resistant to alcohol. It also prevents oxidation, which keeps the flavor of the beverage. The antibacterial nature of sodium metabisulfite antibacterial makes it useful in the process of purifying water. This can be applied to the cleaning of water pipes and in desalinization equipment such as reverse osmosis membranes.

You may have seen sulfur dioxide in the ingredients list of wine, but not like other ingredients you notice in the label, sulfur dioxide is not directly added to wine, it is formed by the adding of sodium metabisulfite or potassium metabisulfite. Sulfur dioxide plays an important role in almost every manufacturing process of winemaking, from grape picking to bottling. It is mainly to inhibit the growth of yeast and bacteria, and therefore preserve the wine fresh and extend the shelf life.Sodium metabisulfite or potassium metabisulfite is commonly added to wines, ciders, or maybe beers as an antioxidant, preservative and stabilizer. Also, it can be used to clean and sanitize wine equipment and wine bottles.

Sodium metabisulfite functions as a reducing agent in biscuit/pastry dough which loosens the dough, reduces the rest time and accelerates the kneading process by reacting with disulfide bonds and generating thiolsulfate esters in gluten protein after hydrolyzed to bisulfite (HSO3−) in water.
Processed fruit products
Sodium metabisulfite can be used as both a preservative and antioxidant in processed fruit products to slow browning reactions, as well as inhibit the growth of certain microorganisms.
