Sodium sulfite (sodium sulphite, anhydrous sodium sulfite) is an inorganic compound with the chemical formula Na2SO3. It is an inorganic sodium salt and a sulfite salt. It appears as a white, water-soluble solid crystalline powder. Heptahydrate sodium sulfite is another form of sodium sulfite, but it is less useful because of its greater susceptibility toward oxidation by air. Sodium Sulfite Food Grade is used commercially as an antioxidant and preservative.
